Sunday, September 7th - Peanut Coconut Curry Noodle (chicken)

Mee Katee. One of many of my favorite noodles. The kind that reminds you of waking up on a Sunday morning to aromatics and the sweet scent of herbs that permeate the air. A stock pot filled with bones gently bubbling. The beginning of an amazing soup, creamy and luscious. You’re not dreaming, it’s something special to wake up to.

Sunday, September 14th Crispy Rice (pork)

Nam Khao. Not all rice is made equal. Welcome to your main event, welcome home. What’s the saying ‘often imitated, never duplicated’ because the dish (all my dishes) was taught to me by my mother or father. Come and celebrate the beauty and magic of flavour, texture, and tradition, that has been carried and embraced, loved and craved by so many. Something special behind every grain of rice and this is the deliciousness I am sharing with you.

Sunday, September 21st Sausage (pork)

Sai Oua. From father to son. You only get so many moments, and you only get so many moments that turn into memories. This is my father’s recipe. They are his sausages, and I’m just the cook that re-creates something special. From my father’s hands to my hands to you. Some things you can’t buy remain priceless and become timeless. I’m honoured to be part of my father’s artisanal craft.

Sunday, September 28th Laap Salad (beef)

Laap Seen. There is an order to the way things are made. Before a layering of sorts and of precise timing. A mother’s mise en place involves waking up the child to gather herbs from the garden. The dish already started yesterday with end-of-the-night coals gently radiating, roasting and toasting what will be the essence to make it whole. I imagine waking up to be part of the process of something special.
